The Beacon Mary

 

The perfect Bloody Mary is a hotly debated topic and one our bartenders at the Beacon have worked on tirelessly to create something unique for the Garden Kitchen. The Beacon Mary is now one of our favourite signature cocktails, with many of the garnishes picked straight from the kitchen garden underneath the bar.

We’ve had to arm-wrestle this amazing recipe from Jim, our bar manager, as he’s very proud of it to share with you, but that’s the I’ll be Mother way, to share the love and our inspirations. Rather than plain tomato we make a mixed vegetable base of tomato, beetroot, carrot, cucumber and celery juices. Each juice adds something to the tomato base – cucumber adds freshness, beetroot earthiness, carrot sweetness and celery gives a vegetal bitterness. We also make our own smoked artichoke vodka, bitters and garnishes in house which makes the most fantastic drink, with a beautiful herbal and punchy flavour profile. Chase Smoked Vodka is a brilliant substitute.

Makes one :

  • 50ml smoked artichoke vodka (or Chase Smoked Vodka)

  • 200ml mixed vegetable or tomato juice
    (mixed vegetables include : tomato, beetroot, carrot, celery and cucumber juice)

  • 22.5ml tomato vine infused Worcestershire Sauce

  • 22.5ml sherry vinegar

  • A dash of cornichon vinegar

  • Teaspoon coriander and basil pesto (house made)

  • Teaspoon green tomato jam (house made)

  • Teaspoon dry spice mix*

  • A dash of chipotle bitters (house made) or a few drops of angostura bitters to taste

Throw in a cocktail shaker all ingredients over ice and strain into an ice filled high ball glass

Garnish

  • A few leaves of rocket, tarragon or your favourite herbs

  • Slice of fresh cucumber

  • House-pickled celery or a stick of fresh

  • Charred baby corn

  • Worcestershire cured tomato

Dress with olive oil, Maldon smoked salt and pepper

*a batch of spice mix

  • 4 tbs smoked paprika

  • 1 tbs cayenne pepper

  • 1 tbs garlic powder

  • 1 golden caster sugar

  • 1 tbs black pepper

  • 1tbs smoked Maldon sea salt

  • 1 tbs celery salt

  • 1 tbs chilli powder
